Omega-3 fatty acids are a family of polyunsaturated (meaning with double bonds) fatty acids which have in common a carbon-carbon double bond in the -3 position; whereis fatty acids are straight chain hydrocarbons possessing a carboxyl (COOH) group at one end. Fatty acids play critical roles in human health and disease. Cell membranes (all cells) are composed of a double layer of fats. Fat gives fried foods a crisp crust and baked goods a tender crumb.
