Omega-3 fatty acids are a family of polyunsaturated (meaning with double bonds) fatty acids which have in common a carbon-carbon double bond in the -3 position; whereis fatty acids are straight chain hydrocarbons possessing a carboxyl (COOH) group at one end. Fatty acids play critical roles in human health and disease. Cell membranes (all cells) are composed of a double layer of fats. Fat gives fried foods a crisp crust and baked goods a tender crumb.

Omega 3 DHA is required during pregnancy for fetal growth and development. It is the precursor of the very important Prostaglandin E3, an important immune system modulating substance, found in every cell of the body. DHA is found in abundance in the brain and the retina of the eye, brain tissue is 60% fat, 25% of which is Omega 3 DHA.
